Authentic doesn't necessarily mean that every dish has to look exactly like something you'd find in a restaurant in Japan, Malaysia or Singapore.

Instead, Chef Martin describes his approach as taking traditional cuisine and adding a modern twist through taste, presentation and the overall experience.

The goal is to respect the original cuisine while creating something that works within a Disney Cruise Line restaurant.

Chef Martin's Favorite Dish

If you ask Chef Martin which dish stands out to him, there's a pretty good chance he'll mention the Wagyu Donabe Rice.
